3 cup
Flour |
2 cup
Sugar |
1 tsp
Baking soda |
1 tsp
Cinnamon |
3/4 tsp

Eggs, beaten |
1 cup
Oil |
2 cup
Mashed bananas, (about 5) |
2 tsp
Vanilla extract |
1 can
Crushed pineapple, (8 oz) drained |
| Method: |
In a large bowl, combine the flour, sugar, baking soda, cinnamon, and salt; stir in pecans. In a separate bowl, combine remaining ingredients; mix well. Pour wet mixxture into dry mixture, stirring just until dry ingredients are moistened. Spoon batter into 2 greased and floured 8x4" loaf pans. Bake for about 1 1/2 hours at 3500. Cool in pan for 10 minutes, then remove from pans. In Hawaii they'd use macadamia nuts, but pecans or walnuts work just as well.
