This is a typical dish from Ecuador, my country. One of my favorite recipes. Hope you like it.
In a large saucepan, heat the oil and saute the onion, garlic, tomatoes, green pepper and coriander. Season with salt, pepper and cumin.
Add chicken and cook, stirring for a few minutes. Add beer and whole hot pepper.
Cover and cook at medium heat until tender (about 30 minutes).
Serve with yellow rice and fried ripe plantain.
Serves 4-6.
