Yield:
Ingredients:
 
1 cup white sugar
1 cup salt (mix of 1/3 garlic salt 1/3 onion salt, 1/3 celery salt)
1/3 cup paprika (1/3-1/2)
40 ml chili powder
40 ml ground black pepper
1 tsp ground ginger
1 tsp dry mustard
1/2 tsp ground allspice
Method:
Combine ingredients in a bowl; mix well. Rub on beef brisket or pork shoulder before cooking. (Note the amount of the last three ingredients can be raised or lowered according to your taste; however, veterans recommend changing only one ingredient per batch.)



Makes enough for 4 briskets or 4-6 pork shoulders.



Yield: 2 1/2 cups
