salt (mix of 1/3 garlic salt 1/3 onion salt, 1/3 celery salt) |

paprika (1/3-1/2) |

ground ginger |

1 tsp
|
dry mustard |
|
1/2 tsp

ground allspice |

| Method: |
Combine ingredients in a bowl; mix well. Rub on beef brisket or pork shoulder before cooking. (Note the amount of the last three ingredients can be raised or lowered according to your taste; however, veterans recommend changing only one ingredient per batch.)
Makes enough for 4 briskets or 4-6 pork shoulders.
Yield: 2 1/2 cups
