0.8 kg Chicken
A
40 ml Oriental fish sauce
1/2 tsp Pepper
1/2 tsp Curry powder
1/2 cup Milk
20 ml Minced garlic
20 ml Green onion head
B
1 tsp Minced garlic
1/2 tsp Chili or chili paste
80 ml Each water, sugar & vinegar
47/250 tsp Salt
Method:
Rinse and pat dry chicken throughly. Marinate with A for 3 hours. Bring B to a boil, then high heat 3 minutes until liquid is reduced to 6 Tablespoons. Let cool to form dipping sauce. BBQ chicken until cooked and skin slightly burned, turn constantly. Cut bite size, serve with dipping sauce. If using oven, preheat 500 degrees. Broil near heat until skin is golden. Reduce to 400 until done (50 minutes).
