Yield:
Ingredients:
 
1   15 cm length baguette
1   Garlic clove
    Olive oil for frying
500 gm Broccoli, (1lb)
80 ml Shallots
    Lemon scented olive oil
    Splash balsamic vinegar
    Croutons
Method:
Take the baguette and rub it with the garlic, then cut it into small cubes and fry them in the olive oil, and then drain them and set aside on a piece of kitchen paper.



Meanwhile, bring a large pan of salted water to the boil. Cook broccoli for about 5 minutes. Drain and discard the water and return the broccoli to the pan and throw in the croutons, shallots, lemon scented olive oil and vinegar and toss as you would a salad.



Transfer to a warmed bowl and serve.
