Ingredients:
 
3/4   cucumber diced
3/4   green bell pepper cored, seeded,
    and diced
30 g green olives pitted and chopped
2 tsp coriander chopped
20 ml chopped mint plus
1 tsp chopped mint
1 1/4 tsp wine vinegar
20 ml olive oil plus
1 tsp olive oil
Method:
Combine all ingredients in a bowl. Season with salt and pepper to taste. Mix thoroughly.
