Country Inn Sweet Potatoes - print recipe
 
   
 
Yield:
Ingredients:
 
3 cup sweet potatoes mashed
1/2 tsp vanilla extract
1/2 cup butter melted
2   eggs beaten
1/4 cup sugar
1/2 cup milk
    for topping:
1 cup brown sugar packed
1/2 cup flour
1/2 cup butter in small pieces
1 cup pecans
Method:
In a large mixing bowl, beat together the first 6 ingredients, then pour into lightly greased 9x11" baking dish. In a food processor fitted with steel blade, combine the ingredients for the topping until crumbly. Mix in the pecans. Sprinkle the topping mixture over the sweet potatoes. Bake uncovered at 350F for 45-50 minutes, until browned and bubbly.
