| Method: |
1. Place sliced potatoes in salted water to cover. Let stand at room temperature while you prepare remaining ingredients.
2. Preheat oven to 375F.
3. Prepare pastry. Divide dough into two approximately equal portions, then roll the larger portion out to a 12-inch circle on a lightly floured surface. Fit into a 9-inch pie plate. Trim overhang. Set aside.
4. Drain and rinse potatoes and pat dry with paper towels. Place in medium-size mixing bowl with sliced pears.
5. Cut prosciutto into thin strips and add to potatoes and pears along with salt, basil and onion. Mix well. Transfer mixture to pastry-lined pie plate.
6. In a small bowl, mix beaten eggs, milk, and flour together and pour over potato mixture.
7. Prepare top crust by rolling out remaining dough to a 10-inch circle. Make several slits in the crust to allow steam to escape during baking. Cover potato mixture, trim overhang, turn under and flute edges of pastry. Bake for about 55 minutes or until lightly browned.
8. Serve at room temperature or cold with sour cream if desired.
