Hash-Browned Potatoes - print recipe
 
   
 
Yield:
Ingredients:
 
3 cup cold boiled or baked potatoes, chopped
60 ml flour
1/4 cup milk
    Salt & pepper to taste
    Instant minced onion to taste (optional)
    Bacon fat
Method:
Mix first three ingredients. Season with salt, pepper and onion. Heat 2 tablespoons fat in heavy 9 inch skillet. Add potato mixture and pack with spatula into a large cake. Cook over medium heat until brown and crusty, shaking pan to keep potatoes from sticking. Turn out on flat plate. Wipe pan free of crumbs, and add 1 tablespoon fat. Slide potato back into hot pan, brown side up.



Cook until bottom is brown, packing
edges with spatula and shaking pan.



Makes 4 servings.
