Tomatoes, seeded and finely diced - 1/4"-3/8" squares extra sharp cheddar cheese, shredded - fairly finely flour tortillas - I like the 6" size, but hard to find here - smallest available tho oil for frying taco shells
I set a plastic colander into a larger glass bowl.
Place raw hamburger in, break up with wooden spoon and cook on HIGH for 4 minutes
Wash spoon with soap.
Stir hamburger mixture Sprinkle onions over top and then sprinkle the peppers Microwave HIGH - 3 minutes,
Wash spoon with soap, then stir hamburger mixture I keep microwaving 3 minutes at a time until the meat is cooked.
(by the way - this is a great way to "defat" the hamburger - the grease all goes through the holes in the colander into the bottom bowl". Also less messy to cook, no spattering.
Meanwhile, put oil about 3/8"-1/2" deep in fry pan and heat oil to 350* (if electric pan) or until spatters (if not)
lay tortilla shell in hot oil for about 5 seconds - I grab one edge with a pair of tongs and when the shell is soft enough to bend, I lift up that side and bend it over the other side.
Cook until bottom is light brown, then turn over and brown the other side.
(We like them soft, but cooked)
Drain on paper towels As soon as finished frying the tortillas, reduce the heat to about 300* - same temp you would scramble eggs at - and make the chili rellenos - see below for recipe
Then just make kind of a smorgasbord setup Start with taco shells, then bowl of meat, bowl of lettuce and tomatoes which are combined, and bowl of cheese.
Assorted sides - if desired - salsa, Tabasco sauce, whatever. and of course, next in line, chili rellenos, and bowl of refried beans (I used canned).
