Make your favorite bread dough, by hand or in the bread machine, and after the first rising (or when complete in your machine), remove to a rectangular cookie sheet or large baking stone. Knead a little to make it easier to work with and roll out into a rectangle, as large as the pan.
Take scrambled eggs, bacon, ham, onion, green pepper, mushrooms...any kind of breakfast omelette-type filling that you like...and pile it on the dough, in the middle 1/3 running the length of the dough.
Cut angled slits in the dough, starting at one end, and begin to braid one end over the other until the filling is covered with the braided dough (some filling will show - this is okay). Allow to rise slightly, about 30 minutes, until it looks light.
If desired, sprinkle with poppy seeds or sesame seeds and bake in 350 oven for 25-30 minutes, or until it is golden brown and it sounds hollow when thumped.
Slice and serve with fresh fruit and/or cinnamon rolls for a hearty breakfast!
