| Method: |
Clean and wash the spinach very well.
Finely slice the onions and bacon.
Melt the butter in a saucepan and add the onions and bacon. Saute gently for 3 minutes until soft. Add the flour and continue to cook for 2 minutes, stirring constantly.
Gradually whisk in the milk and stock to a smooth consistency, bring to the boil, and simmer for 15 minutes, stirring regularly.
Add the spinach and cook for 5 minutes. Puree in a liquidiser and return to saucepan.
Reheat, add cream and season with salt, pepper and nutmeg.
Serve sprinkled with chopped parsley and a swirl of cream.
Use fresh spinach if you prefer.
