Ingredients:
 
1 lrg baking potato in 1/2" cubes
1 lrg dark-orange sweet potato peeled, in 1/2" cubes
2 med carrots sliced
1 med parsnip sliced
1 med onion chopped
0.5 kg smoked sausage sliced
1 can ready-to-serve chicken broth (14.5 oz.)
1 can chunky tomatoes with garlic & Italian herb undrained
2 tsp sugar
1/2 tsp dried thyme leaves
1/4 tsp pepper
1/4 cup chopped fresh parsley
Method:
1. In 3 1/2- to 4-quart crockpot, combine all ingredients except parsley; mix well.

2. Cover; cook on low setting for 7 to 9 hours.

3. Just before serving, stir in parsley.

6 (1 1/2 cup) servings.

INGREDIENT INFO: There are 2 varieties of sweet potatoes. One type has pale yellow flesh with a crumbly dry texture similar to that of a white potato. The other type has darker orange flesh that is sweet and moist. For the prettiest color and richest flavor, use an orange-fleshed sweet potato.

RECIPE VARIATION: To make a vegetarian casserole, omit the sausage and use vegetable broth in place of chicken broth.

SERVING SUGGESTION: For a chill-chasing menu, serve this casserole with warm biscuits and honey, plus mugs of hot orange-spice tea.
