1. In food processor, blender, or mixing bowl, cream together oil, honey, eggs, and vanilla. Add carrots and blend. In another bowl, combine the flours, wheat germ, cornmeal, coconut, orange rind, and oats. Add to creamed mixture and blend.
2. Preheat oven to 350F.
3. Drop batter by teaspoonfuls on a cookie sheet lined with parchment paper or greased with a few drops of liquid lecithin and oil. Bake for 18 to 20 minutes.
YIELD: 3 dozen. Each 69 cals, 4g fat (50%).
