Handfuls dried wild mushrooms, rinsed well (up to 2) |

Carrot slices (prettiest sliced on diagonal) |

Large fresh white mushrooms |

Anything else you think would look pretty. |

| Method: |
Simmer the stock and dried mushrooms together at least 1 hr. Strain & discard mushrooms. Add the carrots; simmer 5-10mins just till softened.
Serve the soup garnished with the carrots, fresh mushrooms, green onions, whatever.
Serves 2.
