Wild Mushroom Soup - print recipe
 
   
 
Yield:
Ingredients:
 
4 cup Beef stock (or broth or consomme or whatever)
1   Handfuls dried wild mushrooms, rinsed well (up to 2)
4   Carrot slices (prettiest sliced on diagonal)
4 slc Large fresh white mushrooms
6   Slivers green onion
    Anything else you think would look pretty.
Method:
Simmer the stock and dried mushrooms together at least 1 hr. Strain & discard mushrooms. Add the carrots; simmer 5-10mins just till softened.



Serve the soup garnished with the carrots, fresh mushrooms, green onions, whatever.



Serves 2.
