Ingredients:
 
1 cup flour, sifted
1/2 tsp salt
1 1/2 tsp baking powder
1 cup applesauce
1/4 tsp lemon peel, grated
1/4 tsp cinnamon
20 ml sugar
1/4 tsp vanilla
2   eggs, separated
1 1/2 tsp butter, melted
Method:
Sift flour, salt, and baking powder into mixing bowl. Blend in next 5 ingredients. Beat egg yolks and add with butter. Beat egg whites until stiff and fold in. Pour about 1/4 cup batter for each pancake onto hot greased griddle, turn once.



Yield: 10 cakes.
