Vanilla Wafer Coconut Cookies - print recipe
 
   
 
Yield:
Ingredients:
 
1/4 cup margarine
1 cup sugar
1 1/2 cup vanilla wafer crumbs
1/2 tsp baking powder
3   eggs
1 cup chopped pecans
1 can flaked coconut (3 1/2 oz.)
Method:
Cream butter and sugar together until fluffy. Blend in crumbs and baking powder. Beat in eggs, one at a time. Stir in pecans and coconut. Turn into Teflon, or greased and floured 8 inch square pan. Bake at 325 degrees for 40 minutes. Cool and cut in squares. Can also be served with ice cream or vanilla sauce.
